Directions

To cook: Rinse 1 cup of amaranth under cold water. Combine with 2.5 cups of water or broth in a saucepan. Bring to a boil, then reduce heat and simmer uncovered for 18–20 minutes until water is absorbed and grains are tender. Fluff with a fork and serve. For popped amaranth, heat a dry pan over high heat and add 1 tablespoon of amaranth at a time, shaking constantly until popped (about 15–20 seconds). Use as desired in any recipe.
